Ever have one of those mornings where you wake up hungry? You know, the mornings when you can’t even get dressed without your stomach yelling “feed me now!”
For me, this doesn’t happen often. I’m more of a sip on my coffee & watch the Today Show for a while and then think about having breakfast kind of girl.
But for some reason this morning… I woke up dreaming about what my first meal of the day was going to be. When this happens, I usually try not to be impulsive by grabbing the biggest bowl I can find in my kitchen and filling it with cereal… That’s my sister, Kelli’s specialty.
I usually whip up my favorite go-to protein pancakes for a healthy, filling breakfast.
I will warn you now – Once you try these deliciously healthy pancakes, and realize just how good they are for you… You’ll never go back to the normal, stuffy, version again. **Boyfriend approved, and that’s saying a lot!
So, now that you’ve patiently read through my rambling… I leave you with… ridiculously healthy Oatmeal Protein Pancakes:
Oatmeal Protein Pancakes
Ingredients (1 serving):
- 1/2 c. rolled oats
- 1/2 c. egg whites
- 1 tsp cinnamon
- 1/2 tsp vanilla
- 1 tsp stevia (or any sugar/sugar substitute)
- 1 tbsp chia seeds (or ground flax seeds)
- Blueberries, or fruit of choice (optional)
Mix all ingredients together in a cup, pour into a small heated frying pan on medium and let cook until slightly brown, then flip.
I’ve also taken the same ingredients and blended them in my Vitamix to make it more like a smooth crepe. It’s great either way!
