Happy November | White Chicken Chili

November is here! I love fall. Cooler weather. Colorful leaves. Crisp air.

Roo seems to be having a great first fall. I couldn’t be happier to have this little nugget in my life. She has been such a blessing this past year.

This weekend, I made some delicious white chicken chili and that is what I’ll be sharing with y’all today! Enjoy :)

HappyGirl’s White Chicken Chili 

Ingredients

– 2 cans great northern beans (drained)

– 1 can black beans (drained)

– 1 can corn (drained)

– 1 can creamed corn

– 2 cans diced tomatoes

– 1/2 jar green chiles

– 1 cup chicken broth

– 1 bottle beer (I used Shiner Blonde)

– 1 onion (chopped)

– 2 jalepenos (chopped)

– 2 tsp. chili powder (or to taste)

– 2 tsp. garlic powder (or to taste)

–  salt and pepper (to taste)

– 3 chicken breasts

Instructions

I love my crockpot because it makes cooking a meal so so easy. Throw all of the ingredients above in your crockpot. Cook on High setting for 4 hours. Take chicken out to shred and place back in. Simmer on Low setting for another hour or two. And voila, you’re good to go!

Side Dishes

I made some delicious cornbread mini muffins (Jiffy box) … SO good.

Also be sure to serve it with a little sour cream and/or cheese. Avocado is also great with this dish!
